I think they tricked him. He realized shortly after arriving, hence references like, "I just want to get out of here so bad, " and, "this isn't REALLY about Dr. Who at all." He was excited to be a part of something combining Dr. Who and cooking, but turns out his hosts were just unprofessional dolts.
