1kg (8 cups) quince - peeled, cored, and chopped
700g (3 1/2 cups) sugar
3g (1/2 teaspoon) salt
56g (4 tablespoons) lemon juice
Zest of one lemon
500ml water

1. Peel, core and chop quince.
2. Add to pot with water, sugar and lemon juice.
3. Simmer slowly until it reaches 105C or 221F.
4. Blend into a smooth paste.
5. Cook slowly for 10 more minutes stirring.
6. Pour into baking paper into a container.
7. Let it set in the fridge
8. When set cut it and have it with Manchego on buttered bread.

Nice. Here is a pro tip. Wash the quinces well, peeel ans core. With the skinsa and the cores we make "jalea de membrillo", or translucent quince jelly. I make mine with a scotch bonnet and have it with cheese.

The really frugal ones take the scraps and make quince brandy, but thats too far for me. I'm too lazy.
