Instead of submerging them in hot boiling water for a few seconds, it is better to soak them for several hours, even if it adds a lot more time to the process. Soaking has been scientifically proven to greatly enhance the nutritional value of Almonds and it allows you to peel them easily and there is no risk of making them soft, unlike hot water.

I will be making Norwegian Christmas cookies that my aunt always used to make. It used to be easy to buy already blanched whole almonds, but they are hard to find, now. I purchased some on Amazon, but they are very expensive, so the next time I make these cookies, I'll blanch my own almonds. Thanks for your video. It was very helpful!

The need to get rid of lectins is an important reason to peel almonds. The brown peel of almonds contains tannin / lectins that can prevent absorption of nutrients. Removing the skin from almonds removes the tannin for better penetration of nutrients. (From Kim Wolinski)

Hi Laura! What a great “coming at you through my iPad” personality you have! The quality of your voice, the speed that you speak, your hand gestures, and perhaps most importantly, the clarity of your directions is absolutely top-notch. Don’t change a thing.
I have blanched and pealed almonds for a number of years to make orgeat. Once I retired and moved to Madison, Wisconsin, I became very involved with making cocktails and learning everything I could about them. This is the first time I’ve used your recipe for blanching almonds, and I’m afraid it was kind of a disaster. What usually is a five minute job peeling the almonds turned into a 40 minute slog through. The only thing that was different this time was drying the almonds after they were blanched. Well, when I started to peel them it was like they hadn’t even been blanched. I had to use a paring knife and even with the knife it just took forever. Nothing close to the way it had always gone. I have never had to use a knife before. The only slight problem before was that sometimes when I squeezed the almond between my fingers the almonds popped out of the skin and took flight, ending up on the other side of the kitchen, or wherever. Has anyone else had this problem? Curious, mainly.

Making an almond spice wine sponge cake from a recipe in a 1940's Settlement Cookbook. Best to use matzo cake flour (Streits or Manischewitz-matzo ground to a very fine texture--found before Passover or usually on sale after Passover in certain markets according to the local demographics). This "flour" adds to the flavors of the cinnamon, cloves, chopped almonds & sweet red wine.

3 ingredient almond cookies ...2 cups blanched almonds crushed 20-30 seconds in a food processor makes a dry powder, add (combine)1 cop powdered sugar tnen separate egg yolk from 1 large egg (whisk and set aside, whisk egg white and add into mix. Mix well and form into ball..preheat oven to 390 .Spoon a large table spoon of dough and form into 19 cookies about 1/2 inch thick. Coat top of cookies with the whisked egg yolk...bake about 9 minutes, (turn all at about 6 minutes )😊
