These savory puff pastry strudels are flaky and airy on the outside and meaty on the inside.
This recipe calls for a beautiful, golden brown puff pastry shell wrapped around a delightful filling of seasoned ground beef, tender vegetables, and a melty cheese.

INGREDIENTS
• 800 grams of Lean Ground Beef
• 1 cup Yellow Onion (chopped)
• ½ cup Carrot (Diced)
• ½ cup Celery (Diced)
• 4 Cloves Garlic (Minced)
• 1 cup Green Pepper (Diced)
• 1 cup Cremini Mushrooms (Sliced)
• 1 cup Green Peas
• 2 tbsp Tomato Paste
• 2 tbsp Worcestershire Sauce
• 2 tbsp Yellow Mustard
• ½ tsp Ground Nutmeg
• 1 tsp Dried Oregano
• 1 tsp Dried Basil
• Salt & Pepper (to taste)
• 2 cups Mozzarella or Monterey Jack Cheese (Shredded)
• 800 grams Frozen Puff Pastry Sheets
• 2 Egg (For egg wash)

INSTRUCTIONS
• Heat a pot over medium-high heat and add the chopped onion. Sauté it until softened (4 to 5 minutes).
• Add the diced carrots and celery. Continue to cook until the veggies are slightly tender. 
• Add garlic and cook for a minute.
• Add ground beef and stir until it starts to turn brown. Season with ground nutmeg.
• Season with tomato paste, Worcestershire sauce, yellow mustard, dried oregano, and basil.
• Add green pepper and mushrooms. Cook until the mushrooms become soft.
• Season with salt and black pepper.
• Add the green peas and stir for a minute.
• Allow the stuffing to cool to room temperature.
• Roll out puff pastry sheets about 16x8 inches and divide by two by cutting them lengthwise. (two sheets of 16x4)
• Place a generous amount of the filling on its half and spread some shredded cheese on top of the fillings. Brush egg wash on the edges, cover the filling with the second part of the dough, and press the edges of the dough together to seal.
• Use a sharp knife and cut the dough horizontally all the way through (about 1 inch apart).
• Brush the top of the pastry with more egg wash.
• Chill in the refrigerator for at least one hour
• Bake in the oven for 30 to 35 minutes at 400°F. 
• Sprinkle fresh parsley on top for color.
