Thats not hypnosis... that's acupressure (accurate hits to nerve points), he is hitting a nerve that follows from the neck, over the shoulder, and down the arm.
Its easiest hit in the neck, by the shoulder joint, or under the biceps muscle.
Hit correctly, and you can, depending on the accuracy and strength of the hit, make someone either temporarily paralysed (the extent depends on location; neck = half the body, shoulder and arm = only the arm) or knocked out cold if hit correctly.
I've literally practised this myself, and it's ridicously efficient in self-defense if you get the opportunity.
