Why did she start by saying salt is all you need to cook a turkey and then proceed to go all out on a three day prep ?

I must have watched 100 Turkey carving videos but Ray Venezia's Turkey from the New York Times 5 years ago HAS to be my all-time favorite video because I have never seen a more Juicy Turkey in my life, love your simple ways for this great Recipe!!

Looks Good.  My mother would boil the turkey the night before, so it was pretty muched cooked.  than the next day she would make cornbread stuffing and place stuffing in, and around turkey.  My mother would melt a few sticks of butter, pour melted butter on turkey and stuffing, place it in the oven for a few hours and voila.

Wet brine is the same work and yields a very moist turkey if you don't overcook it.
