Hi, we are Stephen, Jess and little Hunter, a traveling family who spent 2020 self-converting a van before moving in full-time to drive around our home country of Australia. We have now completed our lap, said our goodbyes, and resumed full-time travel before we wait for our second baby to arrive.

Japan is my favorite country to visit. It was the first country outside of the US that I visited. Can’t wait to see more. You guys are so cute!

Japan is definitely the number 2 places I want to visit ( 1st Iceland). Just love the architecture and culture of japan!! Great vids every time.

Thank you for coming to Japan. I'm enjoying your Japan vlog so much :) I could see you had a formal and traditional Japanese-style dinner called “Kaiseki”. I did my best to read the menu. Here is what you had for dinner. I hope it's not too late.

October Menu 神無月の宴 御献

Aperitif(食前酒): Karin(Chinese quince) sake(かりん酒)
Pre-Appetizer(先付け): Sesame seed tofu(胡麻豆腐)
Appetizer(前菜): Grilled daikoku shimeji mushroom(大黒しめじ素焼き), Chestnut with cocoa(栗ココア), Propagule boiled in soy sauce(むかご田舎煮), Garland chrysanthemum and shellfish with edible chrysanthemum(春菊と煮貝の菊花和え), Maitake mushroom and Hiratake mushroom with radish sauce (原木舞茸と平茸の鬼おろし掛け)
Soup(吸い物): Clear soup with Matsutake mushroom
(松茸すまし仕立て)
Sashimi(造り): Red trout sashimi(茜鱒重ね造り), Oncorhynchus masou ishikawae(五月鱒), Tofu skin(身延湯葉)
Simmered dish(温物): Stewed tomatoes and beef tendons(トマト釜牛すじ射込)
Shinogi(しのぎ): Acorn noodles(どんぐり麺)
Grilled dish(焼き物): Grilled cherry salmon(山女魚の塩焼き)
Special dish(名物): Koshu wagu stake on lava plate(甲州牛溶岩焼き), Koshu wagu beef A5(特選甲州黒毛和牛A5), Vegetables(付け野菜), Ponzu sauce(ポン酢), Citrus chili paste(柚子胡椒), Salt(塩), Pepper(胡椒)
Soup(止め椀): Clear soup with hoto noodles, Ami mushroom, and chive (素出し汁 宝刀 あみ茸 浅葱)* Hoto noodles is local food in Yamanashi.
Pickled vegetables(香の物): Daikon radish pickled with malted rice(べったら漬け), Pickled cucumber(きゅうり??漬け), Japanese leek pickled with wine(ワインらっきょう)
Rice(ご飯): Steamed chestnut rice(栗ご飯)
Dessert(デザート): Persimmon Jelly(富有柿のゼリー)

I absolutely love Hunter's enthusiasm for all the food, from the street food to this. It's delightful and so refreshing to see - children are curious and can enjoy anything. 🙂

One of my best friends and I just booked a 4-week trip to Japan in late February/March and watching you guys' vlogs is getting me SO excited!!! Can't believe I'm actually going there too, I've always wanted to visit Japan🙈

What a REMARKABLE place to stay! Not just due to the fact that it's the oldest known hotel in existence but that they've made sure it has all the comforts and luxuries that guests from around the world can appreciate (which may be why it has lasted SO long)! Just think that just six years after this hotel opened (in 705 AD) in the mountains to have guests soak in the hot springs, on the other side of the world, the Moors invaded and conquered the Iberian peninsula! I doubt the Iberians or Moors could have imagined that Japan existed (or vice versa) much less that there it had a special retreat even back then! It looks as though it was a fantastic treat for you all and thanks for treating us to it!

I felt so happy for Jess' mom! I still remember when you gave her the trip as present to go to any place in the world and she immediately responded she wanted to go to Japan and then covid hit but now she's finally there <3

Japan seems amazing. I'm from Perth and I have lived in Western Australia my whole life. I'm about an hour from where you both grew up together. You both inspire me. I've been working almost always full-time the last couple years and saving away for travel. Japan being my number one. I would love to see a Japan Flying The Nest expedition for 2 weeks in 2024 as I'd absolutely join.

Oh!!! What a dream to meet That Family! I dearly love Japan and it is near to my heart, but I would say probably meeting that family would be up near the top. You guys are great, thanks for always bringing smiles and laughter to us all. You all look stunning too in your robes and Mum's excitement is precious! This was healing for me~ sending love from the US.

Hunter just gets sweeter and sweeter with every video..singing in the car, trying the food at the hotel, jumping on the bed and saying "sleep over", "night night". she is the most adorable child on you tubes🤗.
