Hudhayfah said: I prayed with the Prophet (peace and blessings of Allah be upon him) one night, and he started to recite al-Baqarah. I thought he would do ruku’ when he reached one hundred ayas, but he kept going. I thought he would complete it in one rak`ah, but he kept going. I thought, he would do ruku’ now, but he started to recite al-Nisa, and he recited all of it, then he started to recite Al Imran and recited all of it. (Narrated by Muslim, 772).
Note: An-Nisa comes after al-imran

For the three rakat of Witr, it is the Sunnah of Prophet Muhammad (ﷺ) to recite Surah Al-A'la (chapter 87) for first rakat, Surah Al Kafirun (chapter 109) in the second, and then Surah Ikhlas (chapter 112) in the final rakat.

ASAK. Our Rasool SAW did not always follow the sequence of surahs in prayer. Hence, even if you have recited surah Annaas in the first rakat it should not be construed as a mistake. Allah SWT knows best.

A sahaba R.A was regularly reciting surah ikhlas in his every rakah after that he used to recite other Surat and other sahabas Radi Allahu anhuma told prophet Muhammad Sallallahu alahi wa sallam. He S.A. W asked him are you doing this he R.A replied yes i love this Surat Prophet Muhammad Sallallahu alahi wa sallam told him wallahi Allah love you more than that for this.
