I genuinely like abilities with near limitless potential since it gives room for speculation and I love to craft scenarios where these ability users become the strongest. This is what I would do

Firstly, train. Can’t have a good technique without a good user in any way, I would focus more on my physicals so I can wield more unruly weapons like Playful Cloud since I have the cursed energy gained from my technique, learn how to amplify my power using cursed energy masterfully, practise my gawk gawk skills and start scoping out Cursed Spirit hotspots inside and outside of Japan since information is key and I need to scope out as many Grade 1 and above cursed spirits to maximise my Uzumaki once I obtain it through training. Meeting individuals like rika or learning reverse cursed technique are extremely based on luck so i won’t count that

After I’ve gathered a good amount of spirits in Japan and possibly a few Grade 1’s, I would hopefully be a Grade 1 sorcerer which then it’s time to expand my arsenal into even farther depths. I would first learn about all the spirits I’ve gathered to make the most sensible combo I can with their traits and using my connections as a Grade 1 sorcerer, snuff out all the Grade 1’s I can with my ability since at the end of the day my main goal is a Special Grade. Hopefully through this process I can gain a few abilities myself using Uzumaki and after maybe gaining the cooperation of another Grade 1 Sorceror, I would go and hunt for a Special Grade. Since Gojo has been born, untamed Special Grades should be littered around Cursed hotspots and by untamed I mean individuals that are about the same strength and skill level as the Finger Bearer. I would pray that it’s not that strong, collect it and continue repeating this process until I’ve hopefully met a special grade with a strong ability that I can reasonably take down with the help of an ally and a weapon like Hanabi (the flower special grade whose name I forgor). After a certain amount of time as a Special Grade sorcerer (hopefully), I would branch out into other sectors of the world to collect more special grades and weapons that I can reasonably use in order to prepare for whatever the fuck happening in shibuya. Assuming I follow the main timeline of events, I would use my ability and army of cursed spirits to slowly but steadily claim the abilities of Mahito, Dagon and hopefully Jogo if I’m strong enough. I stray far far away from sukuna and fly to other countries to continue my Pokemon collection. Assuming everything proceeds as normal and the Jujutsu High members are the same as the end of series, I’ll return to Jujutsu High and set up another Cursed Parade but this time with a bunch of Special Grades with me at the center of it all, I’ll go out with a bang if I lose and if i win, I’ll transmute all the sorcerers into biological cursed spirits with their abilities intact so I can absorb them and rule the world muahahahha
