Things he could've done to get diamonds:

Waited for a creeper to spawn and blow up the diamond blocks.

Kill the iron golem (which he did) and grab sticks from the tree leaves. (which he didn't)

Looked for a village that has wood in its chest.

You don't need a crafting table to turn diamond blocks into diamonds, also you just need a creeper to blow the diamonds up to gather them
