MASON JAR BLT SALAD! Tired of eating the same thing for lunch? Make this instead! Mason jar salads make meal prep easy.

With crispy bacon, sweet corn, juicy cherry tomatoes, and creamy feta, this salad recipe is packed with protein, fiber, and goodness. You’ll forward to lunch when this is in your fridge!
YOU’LL NEED
-1 (15-ou) can chickpeas rinsed and drained
-½ c julienned sun-dried tomatoes (optional)
-8 c kale, tough stems removed and chopped
-¼ tsp kosher salt
-1 pint cherry tomatoes, halved)
-1 ½ c sweet corn kernels
-½ c crumbled feta
-¼ c finely chopped green or red onion
For the Dressing:
-¼ c fresh lime juice
-2 T extra-virgin olive oil
-¾ tsp smoked paprika
-¼ tsp kosher salt
Stir the dressing together in the bottom of three, 32-ounce jars, then layer in the remaining ingredients, starting with the chickpeas and ending with the kale. BONUS TIP: Top with chopped avocado before serving!
