Innovation. Sometimes, it happens fast. Sometimes, it happens slowly. Sometimes, it doesn't happen. Using liquid nitrogen to package a food product is not new. However, this technology might prove helpful for bulk shipments of maple syrup.

Ultimately, the goal is to make moving maple syrup as easy and low-cost as possible. It will take 2 years to complete this test and verify product quality. In the meantime, we will use the old bag-in-a-box. it works. However, it may not be the best packaging for all stakeholders.

find out how they make dry ice, that's CO2 but you can do the same thing with nitrogen. Then you just need to drop a piece in and put the lid on.
