Quick tip; Cook your mixture for 30-35 minutes, then remove from the oven and let them cool for around 2 hours. Once cool enough, place them in the fridge for a further 4 hours.
This should result in your brownies being nice and gooey in the middle, but also having enough structure to be removed from the tray.

If on the other hand you prefer your brownies more cakey, just cook for 45 minutes and don't bother putting them in the fridge.
