Automating Track Volume In Reaper

I love your videos, they are really helping me.
Question: I am trying to do a voiceover and use a reagate to control unwanted noise, but I find that in some areas I want the gate to be more open as it clips the SSSS of words like "success".. but if I open the gate for the whole track there are hisses where I don't want hiss. (i can't afford a better mic). this video shows how to do volume.. but how do you do gate? - so the media item FX settings override the tracks FX setting.. if you see what I mean?

Cant you also just create splits in the track and drag the little volume icon in the audio up or down?
