RECIPE (8 bagels, 2 1/2h prep time):
-1 1/2 cups (360ml) lukewarm water
-3 Tsp instant yeast
Stir until dissolved
-4 cups (520g) flour
-1 Tsp salt
-1 Tbsp sugar
Stir then knead with floured hands until it’s a soft dough.
Let it rest 60-90mins.
Divide in 8 balls and shape by pressing a hole in the middle.
Water bath:
-about 2 liters water
-1/4 cup (60ml) agave or maple syrup
Bring to a simmer then cook the bagels 1min each side.
Brush with vegan cream (and add sesame seeds if you want).
Bake at 220C/425F for 20mins.

Pro tip I learned from someone who used to work at a bagel shop where everything was made from scratch (it’s a popular spot, at least in my hometown of Ottawa), add baking soda to your water bath.

Baking soda makes the water more alkaline, giving the bagels a pretzel-like quality that contributes to their chewiness. Adding just one teaspoon helps the bagels develop a shiny, dark-brown exterior while they bake.

I tried this today! And I don’t own an oven but I baked them in the air fryer and they came out really good :) I used 3 cups of regular flour and 1 cup of whole wheat flour bc I ran out half way but they were still really delicious. You gotta let them cool about 80% before you cut them or they’re a bit gummy in the center, but it could be an airfryer mistake, dunno about ovens.

Did you know know that the Yiddish word Bagel (Beigel) is related to the German word for 'bending', "beugen". Ein "Beugerl" is therefore a dough stick that has been bent into a circle, with its ends meeting.
