MY FAVORITE TATOR TOT HOTDISH!
Warning this is a feel good meal!

- Brown 1 pound of ground meat
- Mix meat in pan with 1 block of cream cheese (most people use cream of mushroom soup)
-Mix with 1 bag or 2 jars/cans of your favorite veggies (I love home canned green beans but canned or frozen, beans, carrots, corn and even potatoes work great!)
-Put mixture in the bottom of the pan. I like to do the whole thing in my cast iron pan!
-Top with shredded cheese!
- Arrange ENTIRE top with tator tots (Your perfectionism will show here).
- Always season tots! I like to use celery salt and pepper!
- Bake in oven at 350 degrees until tots are crispy.

But seriously. When my family was larger, my storage trick for mashed potatoes was to freeze them. Just cook them, mash them, freeze them. I added the milk and butter when I re-heated them. I had a favorite hot dish/cassarole pan for that process, so before I froze them, I lined the dish with foil, pressed the potatoes into it, then froze them in that shape. (Sometimes you have to freeze them in that dish for a little while)
Then, when you want to make them, just pop the foil package back into the dish and put it in the oven!

We always plant in fresh, high hill rows about 3+ inches deep & keep the potatoes covered as they grow. First year I planted I had sweet potatoes as big as my boot & filled two 5 gallon buckets of white potatoes in 40 ft rows. With a family of six I would say you need to plant a whole lot more. I leave them in the ground until it is close to a frost date, also straw will hold in the moisture & keep the weeds down. Good luck!

I got my seed savers potatoes a couple weeks ago too and planted last weekend. I'm trying the German Butterball potatoes for first time too.
