I like using the smaller UI.
When you open the inventory, the mouse will always be at the same place, and with the smaller UI that place will be one of the spaces of the inventory, i usually put a sword/axe there, so i can change it without changing the hot bar, basically giving me a 10th slot.

Don't know if it really help or if it is worse, but i got used to it now

The reason this guy has a faster time than dream is actually because instead of using the crafting table on the pillar next to the platform, he used the table that was already on the platform.
