Portugal also had a rooster, I thought. Certainly I've never really seen any wolf iconography on Portuguese stuff, but the rooster symbol (specifically a black one) appears all over the place (including on Nando's of course, modern society's greatest tribute to the historic Anglo-Portuguese alliance).

Iceland has an eagle graphic but our national animal is actually the Gyrfalcon. The largest falcon.
I guess they just used the same graphic for all birds of prey.
