I’ve been only drinking pour over at home for the last several years, I bought this and it truly makes a better cup of coffee than I can do with a manual pour over. I’m really enjoying it.

This is probably Fellow's best product if you're measuring value for money. I do agree that their products are generally somewhat expensive. I bought the Fellow EKG Pro a while ago and while I agree that it's outrageously expensive, I also love that I can leave it on the counter (because it's beautiful) and easily schedule my water to be at perfect temperature right after I get home from walking the dog.

The Aiden can probably make better pour over coffee than 90% of home coffee enthusiasts. Pour-over is outrageously hard because there are so many factors to consider. Just to start brewing I'm putting my v60 filter + paper into a BPA free IKEA container filled with boiling water so ensure temperature stability. After that, I have to carefully pour water in at the perfect height multiple times throughout the brew. If I wet WDT / swirl a bit too hard, the outcome is going to be different. If I pour a bit too high, the outcome is going to be different.

This thing has perfect temperature stability, custom profiles, sensors that prevent making mistakes, a water boiler, an advanced shower head. If I had to guess the price knowing that the company that built it is Fellow I would certainly not guess that it's below 500 USD.

I have a Cafelat Robot for making espresso because I love the control that it offers me. I feel like I can make perfect espresso with this machine. The moment that I switch to filter coffee with a V60, Aeropress, or french press, I never seem to get a cup that I really am blown away by. I feel like this machine can help me with this. This would also be extremely handy when you have people coming over and need to brew for more people. I could actually ask my local coffee roaster to share the Aiden profile that he configured for his beans and the lotus drops he used for his water and I'd be able to brew amazing coffee without effort. I still enjoy the ritual of making coffee but that's why I still have my manual grinders and the Cafelat Robot. This is effectively a better moccamaster to me.

I'm using the Aiden and, after a bit of tweaking and a firmware update, have to say it makes good coffee, comparable to my V60 and Wave filter hand pour methods. I like that I can program a brew and have it ready in the morning, which saves me time when I am rushed. Clean up is simple. It's fun to tweak the settings to see if one can get a better cup. I do wish for three things:
1. not having to swap out the filter buckets
2. that the filter buckets were made of glass, ceramic or steel if possible, instead of plastic. Can Fellow offer this as an upgrade, I wonder?
3. a built-in grinder (that may be asking too much, but I bet it's possible)
Another poster questioned the quality control of Fellow products. I am also concerned about that, since the first EKG Kettle with Bluetooth I bought broke down quickly and the replacement one is starting to show erratic behaviour with its thermostat.
For my simple and minimal home use, however, the products (EKG Kettle, Ode Grinder and recently added Aiden) have so far held up. I can see the Aiden as being an important and time-saving part of our daily coffee ritual.

You look at something like Nespresso's Vertuo, which starts at around $150 and change and can go all the way to $600 and change(the Creastista something). This looks like a steal when compared to those. Yes, you cannot do espresso, but then if you are buying this, more likely than not, you already have an espresso workflow setup in your daily routine. This one takes the Aeropress/Hario/Kalita workflow a notch. I would get this mainly for the batch brew option.

Anyone complaining about the price obviously hasn’t owned the fellow kettle yet. If the coffee maker is anything like that then this is a completely justified price. Starbucks is always open to taking your valued $8 mocha 😂

So they did a scale for water. I am not disappointed but a little surprised they didn't do a scale for the brew bed so if you have a guest at your house that just tossed X amount of coffee in and pushed "instant brew" it would give a preset off how much coffee was in there. They could call it "instant brew dummy's" setting haha.

Interesting you re saying to imitate a kettle is a feature of the aiden. I thougt its a disadvantage that you brew coffee with different temperatures (high to lower) in one brew because it slows the extraction throug the brewing process. so thats why a lot of people like james hoffmann recommend to bring your kettle to boil before pooring. so for me it will be interesting to try my brews prepared with a constant temperature for the first time

I’ve been really struggling to get my Baratza Encore ESP dialed in as a starting point for any brew. Still using the coffees that came with the machine and I’m thinking I just don’t like their profiles. Super sour, no matter how fine I go. I’m worried dialing in the grinder is going to be more difficult than other machines.
