📃GARLIC-ROSEMARY AIOLI ⤵️
INGREDIENTS
➡ 1 TB plant-based butter
➡ 1 tsp olive oil
➡ 7-8 cloves garlic, finely chopped
➡ 2 tsp fresh rosemary, finely chopped
➡ ¼ cup white wine (or veggie broth)
➡ 1 TB lemon juice
➡ ½ cup plant-based mayo
METHOD
1. In a small saucepan over medium heat add butter and olive oil.
2. Lower heat to low and add chopped garlic, cook gently for 1-2 minutes stirring often to prevent browning.
3. Add in rosemary, white wine and lemon juice. Cook for another 5 minutes until liquid begins to reduce, and mixture thickens slightly.
4. Remove from heat and let cool.
5. Once cooled, add mixture to 1/2 cup mayo and stir to combine. Season with salt & pepper as desired.
NOTE:
Let sit for a couple hours for best flavor
📃BALSAMIC-DIJON TOFU ⤵️
INGREDIENTS
➡ 2 TB Balsamic vinegar
➡ 2 tsp Dijon mustard
➡ 2 tsp Neutral oil (avocado, sunflower)
➡ 2 tsp Veggie broth
➡ 1 block firm tofu, frozen & defrosted
METHOD
1. Preheat the oven to 400º F.
2. Mix all ingredients except tofu together.
3. Cut tofu into ¼ inch slabs, and lay on a clean dish towel. Press with a second towel to remove excess moisture.
4. Dip tofu in marinade and lay on a lined sheet tray.
5. Bake tofu for 20-25 minutes until beginning to firm. Flip the tofu over and bake for another 10-15 minutes. Tofu will continue to firm as it cools.
NOTE:
Use frozen and defrosted tofu for best flavor and texture.
📃CARAMELIZED ONIONS ⤵️
INGREDIENTS
➡ 2 TB olive oil
➡ 3-4 large yellow onions, sliced
➡ Salt & pepper
METHOD
1. Heat a medium saucepan over low heat. Add olive oil, diced onion and season with salt & pepper.
2. Cook low and slow for 45-60 minutes, stirring every few minutes. Continue cooking until onions begin to slowly turn golden brown and become sweet.
3. Onions are done when they have a darker brown color without becoming blackened or burnt.
