Hey guys, on this episode of "Raven's Ratchet Kitchen" I'm making Chilaquiles with Eggs and Cinnamon Spiced Plantains. Chef Toni (my mom) is helping and Ziya is the sous chef! Our "ratchet" recipe is below!

olive oil
4 corn tortillas
1/2 onion, sliced
1 jalapeno, chopped
4 eggs, lightly beaten
1 cup jarred salsa (your choice, red or green)
handful of cilantro, chopped
1 Avocado, sliced
Shredded Jack cheese or Cojita cheese (Optional)
Heat the oil in a skillet over medium high heat.
Saute the onions and peppers until tender. Remove from pan.
Add more oil if needed.
Fry the tortilla strips until golden brown on both sides.
Pour the salsa over the chips and cook for one minute.
Pour the beaten eggs over the chips and salsa, and cook, moving the chips around until the eggs are done.
Add the peppers and onions back into the pan.
Add cheese (Optional)
Remove from pan and garnish with sliced avocado, sliced fresh jalapenos, and cilantro.
Serves two.
