Carrot Salad

2 pounds carrots, grated
20 ounce can crushed pineapple, well-drained
1 cup raisins
1 cup mayonnaise
1/2 cup powdered sugar

Wash, peel, and grate carrots. Add pineapple and raisins.

Whisk together the mayonnaise and powdered sugar.
Stir into the carrot mixture, making sure to coat everything well. Serve immediately or chill up to one hour before.

Leftovers will have liquid form in the bottom of the bowl. Simply stir it back in before serving a second time.

I love the fact that you shared and got emotional at the end of the video thinking about your mom. I had tears my eyes thinking of mine and all the things that she made me when I was a kid and my grandmother. It is so precious to have those people around while they’re here, and we have to show them we love them every day and appreciate them. I sure do appreciate you and Melissa. My mom was from Kentucky, she was born in Louisville and then lived in Harrodsburg.

Believe it or not, Chick-fil-A served this for years!! They discontinued it right before they got rid of their coleslaw. This is the recipe I figured out after that because it’s the only vegetable I could get my young son to eat!
I don’t use sugar, opting for a little salt and ground black pepper. We love this salad!! I use the small grater side as it’s easier to chew for toddlers and little ones.

Oh my gosh. My grandfather always told me "Raisins are rabbit droppings". I would never eat them after that. Never had them in my house! My daughter came home from kindergarten all excited because they had oatmeal raisin cookies, and they were "so good'. She asked me why we never had cookies with raisins? "they are just dried grapes". I was adult and still believed my grandfather. If you couldn't trust your grandfather, who could you?

LOVE this salad. There is a restaurant near my work that serves this, and I get it every time I go. I count it as a salad and dessert. Love it with pineapple, and I think it'd be great with some chopped pecans in it too.

My mom always made carrot salad, but hers was made with orange Jello. So true... so many family gatherings with good food and treasured memories!!

My mom always made this when I was a child. I will normally buy the cheapest raisins but golden are my favorite. I've never made it with any sugar, just real mayo. My mom would heat a pan of water up on the stove and soak her raisins for a short bit to soften and plump them up and then drain. I also do the same. I like think this salad is best made the night before so the flavors incorporate together and the carrots soften a bit. Love carrot salad!

One of the reasons I watch your channel are these vintage.classic recipes you do together on your channel And most of all as you mention they bring back great, loving, memories of my childhood. Everyone in our family cooked.I began my culinary career by playing on my Aunt Ines kirchen floor with pots and pans and wooden spoons then graduated to helping her with small prep chores while she cooked. From a young age I loved to take everything out of the bottom cupboards and drawers and "organize " them for my Aunt lol lol I graduated to the top caninets as I grew up. lol My Aunt Ine could cook anything from scatch but barely ever measured anything so even today at 86 do I . lol Old habits die hard lol Love your channel you both are lovely people..Keep cooking...

My Mom made hers with finely grated carrots, raisins, milk and sugar. That's it and we loved it. The milk turned orange and we loved it too. LOL
