Why cook grain's at 230° though?
That's cheating for those that don't want to cook through a full grain conversion.
Aside from denaturing enzymes and such, those temps are prone to scorching if you're not careful.
Corn for instance you cook at 190° for 90 mins.
You want to preserve as much flavor as possible without adding off flavors that won't distill out.
230° seems extreme to me, to each is their own though, there's several ways to skin a cat 💪🍻
