I fell into it accidentally. As someone who has been a freelance copywriter for 12 years, I wasn't bothered by ghostwriting at first because nothing I've written has my name on it and the money was guaranteed. However, I've written more than 6, 500 articles and blog posts (there are at least 5 blogs that are 100% written by me). I've also done four books for about $1, 500 each (three for the same client). Found out the first one is a best-seller in three countries, so feeling some kind of way about it now. Also took time away from the three books of my own I keep putting aside to write for other people because I still have bills to pay. Recently decided to put a profile on Upwork, but not even a nibble so far. I think part of the problem is that I can't use writing samples or testimonials from past clients because I have NDAs and exclusivity clauses that could put me in legal trouble. Not necessarily looking for advice, just needed to vent.

A ghost writer could also be thought of as an editor or consultant. But for liability reasons, it's best for the original writer to make it as clear as possible that the person will not be getting credit so "ghost writer" is easiest.
