Incredibly delicious way to cook lentils! Easy breakfast or dinner recipe! 🥣 Ingredients:
7oz | 200g | 1 cup red lentils
1 onion
1 medium carrot
1 celery stick
1 garlic clove
7 oz| 200g | 1 cup chopped tomatoes
16fl oz | 450ml | 2 cups vegetable stock or water
3oz | 75g | 1/3 cup sugar (I use coconut sugar)
2oz | 50g | 1/2 cup walnuts
2tbsp water
🥣 Spices:
1/2tsp Italian herbs
🧑🍳Cooking tips:
❗Feel free to add your favourite herbs and spices to the recipe to get your favourite flavour.
🥣 Method:
Rinse 7oz | 200g | 1 cup red lentils with water.
Set rinsed lentils aside.
Heat olive oil in a skillet.
Add 1 chopped onion and 1 grated medium carrot.
Fry for about 3 minutes.
Dice 1 celery stick and add to the pan.
Mince 1 garlic clove and add to the pan.
Add rinsed red lentils, 7 oz| 200g | 1 cup chopped tomatoes and season with 1/2tsp Italian herbs.
ℹ️ Feel free to add your favourite herbs to get the flavour you enjoy.
Add 16fl oz | 450ml | 2 cups vegetable stock or water.
Cook with the lid on for about 20 minutes over medium heat.
Combine 3oz | 75g | 1/3 cup sugar with 2tbsp water in a pot.
Allow sugar to melt and bring to a boil.
Add 2oz | 50g | 1/2 cup walnuts.
Caramelise walnuts for about 5 minutes.
Let the walnuts to cool down on a parchment lined plate.
Add freshly chopped parsley to the pan and mix.
Serve with a dairy-free feta, caramelised walnuts and enjoy!
