I tried making macarons... but the keto version? Let's see if it works! This was just a fun video to film!

i guess the problem came from the replacement sugar as regular sugar reacts with heat to create a gel base chewy texture while keto sugar can't.

It’s 100% the sugar. Macarons won’t work without the exact ingredients. I’ve made beautiful macarons and used the same recipe only substituting Swerve for the sugar. Same result!

Try letting the macaron shells dry out. Leave them in a fridge for 30 mins, or depending on the humidity, 3 hours at room temperature.

Oh my gosh! I closed my eyes when you placed the bowl on your head hahaha I was so scared for you haha. It looks so hard to make, so kudos to you for being patient. I agree, now I know why they're so expensive haha

It’s because you have to let it sit out for 30 minutes to an hour so I can get dry on the top of the cookie and then you put it in the oven

I never even considered how macarons would taste if they were keto! I love how real this was haha. Maybe the batter got thick because of too much flour? No idea, but at least you tried!! Macarons are a treat, for sure.

Just FYI, because I’ve been called out on this, you’re pronouncing it “macaroon, ” which is not a big deal, but a macaroon is a completely different dessert.

Figure 8 the macaron batter absolutely is necessary. Cane sugar adds stability to the whites. Sugar substitute doesn’t have the same chemical structure. Leaving them out for well over 30 min to develop that crust (at least 1 hour). “Macaroons” are coconut cookies. “Macarons”are the almond cookie. 😊

macarons don't need to be stirred too much lightly fold and then pipe and let rest for an hour to crust . then bake I think you oven temp was a little high too
