Emily Merrimack. There was a scene in the script that never made it into the final film where her last name was given away along with some minor details of her parents.

It also explained how she knew so much about Victor before they met. As she actually died 9 years ago, and despite being buried she saw Victor when he would visit the woods throughout his life. Its part of how she knew about his dog and even his name.
