you didn't answer the most basic question: if you change your mobile version, does it change the desktop? Or are these two separate things?

Just turn the mobile friendly mode off. It's under the settings > Mobile friendly > disable. Much easier and the page looks good without spending another million hours sorting the messed-up mobile version. Just anchors could be a bit misplaced if you have them.
