This gluten-free "lazy" cookie is ready in about 15 minutes and perfect since Rhubarb is in season. You can store the extra strawberry mixture in the fridge for a few days and pop them into a ramekin when you need a quick cookie. I prefer to use dates instead of sugar because it has added fiber and minerals. Just preblend them with some water
