About the Sunshine Farm
We're Jenn & Chris. We are millennial homesteaders on a small plant based hobby farm and modern homestead in Upstate NY, where we focus on sustainability, loving on all our animals, and enjoying wide open spaces. This is fantastic. BTW, the other reason to remove the tomato seeds for sauces and ketchup is most of the excess water (and very little taste) is in the gel around the seeds. The sauce will cook down faster if you remove the seeds. There's a quick way to remove the seeds: cut the tomorrow crossways, exposing the seeds, then gently squeeze it like you're squeezing a lemon (only softer). They fall out, and the rest of the tomato goes in the stockpot.

With all that food you have to be creative. The more combinations the better. Canned stuff in the winter is the best.

Love small onions so I don't waste a big onion when I usually only need a smaller amount.

Your harvest looks fantastic. My question is you mentioned your preservation of your zucchini zoodles that you dehydrated them. How long did you do this for and does this get rid of the mushiness when they are defrosted.

might want to look into a mill for tomatoes in the future as it makes the cooking time so much faster when you remove the skin and seeds.

Next year will be our first year of really having a garden, because we’ll move during the winter. Did you already had a lot of food to preserve in your first year at the sunshine farm? I really don’t know what to expect for the first year, it’s exciting! Thanks for sharing all your tips and ideas and thanks for inspiring us!

You guys should make onion stock with all of the onion scraps and then can the stock! Its great for soup bases and gravy!

Loved seeing your harvest. Question: when you canned your ketchup it looked like you didn't clean the rims of the jars which had food on them. I hope the video was wrong. If you don't clean the rims the jars may not seal safely which means they can not seal which would cause spoilage (possibly without you knowing). Just want to make sure you and your family are safe.

This is inspiring video, we just start our spring here. I hope I will get lots of harvest and will start to preserve like you guys, but not sure how it will turn out at the end of summer as I just put my seedling outside last week and we have SNOW today!! :-(
