If u don't want soggy fries cover your potatatas in oil and throw em in the oven for 10-15 then fry. Then you get crispy on the outside soft on the inside

Where I’m from that in and out sauce is just called fry sauce and I have recently found out that everybody else closer to the east calls it like burger sauce or just doesn’t have it

Whenever I make fries I like to remove the starch and let them get salty in a bath of mostly water salt and a bit of pickle juice
