PRETTY PURPLE GNOCCHI 💜 Full confession...this was my first time making gnocchi and oh snap...they came out absolutely fabulous! I learned a lot while singing up this simple dish and no doubt you’ll have fun cooking this recipe with the whole family! TIPS: Let the potatoes cool before you remove the skin + mash them, and make sure to start off with a little bit of gluten-free flour and then add extra flour as you knead the dough to form a long tube. INGREDIENTS:
Crushed Pistachios (½ Cup)
Vegan @FollowYourHeart Feta Cheese (2-4 Tbs)
Purple Yam/Potato or Ube (1-2 Cups Cooked + Mashed)
Gluten-Free Flour (½-1 Cup)
Salt (¼-1 Tsp)

GARLIC BUTTER SAGE SAUCE:
Vegan Butter (⅓ Cup)
Minced Garlic (1-2 Tbs)
Fresh Sage (6-8 Leafs)
Smoked Paprika (1/4 Tsp)
Salt + Pepper (to taste if needed!)
