1. The Soups: Secos (Stews), Sopa (Soup) are all quite tasty. The best is Locro de Papas a creamy potato soup found throughout Ecuador. Caldo de Gallina (Chicken soup) is also a winner.
2. The Pigs: Hornado, Fritada or just simple guinea pig (guy) are all foods you will enjoy while traveling Ecuador.
3. Seafood: Ceviche, Corvina, Trout, there are a lot of great seafood and fish dishes in Ecuador to enjoy.

Nice Video Dr. Mark. You managed to put out a LOT of information on a short video. Just to add to the information on the video: The best pork related food is in the highlands like Quito and surroundings and Cuenca; for secos or encebollados Guayaquil is the place; for seafood related and green plantain paradise food, Manabi province is the best. You can usually have all the named foods anywhere in Ecuador but to get the real deal it's best to get the specialized local food 😉

The most delicious thing you can eat in ecuador is the bolon. Its a green banana or platain fried, smashed and added chesse and pork and made it into a big ball. You can eat it with coffee or orange juice. Its the best thing we can eat for breakfast.

This is a story about seco I know: At the beginning of the 20th century petroleum was discovered in Santa Elena, Ecuador. So an English company was hired to extract it, this was the Anglo Company. They established a camp that soon became know as Ancon town (Ancon= ANglo COMpany). People from Santa Elena was hired by the English for doing chores like cooking.

A lunch in Ecuador usually includes two dishes: a soup and the main dish or “Segundo” (second dish).
English didn’t like the soup because it was hot and Ancon is a hot place (it is located near to the beach with a temperature over 30 degrees Celsius) so they asked for the ”second”.

The most common second prepared was the goat meat stewed (goat is an animal that is easily found in Santa Elena).

As the English asked for the second, the natives started to call that dish the “second of chivo” and later because of the local pronunciation it became the “SECO” of chivo.

I don’t know if this story was true but it sounds logical and credible, doesn’t it?

I’m from ambato Ecuador i grew up in the United States but the food i grew up having definitely very underrated ceviche is my favorite and encebollado yum ! Haven’t met one American who hasn’t fell in love with the food yet ♥️

If you're coming here, Ecuador, then I'll give you some advices about food you must have to taste. For instance: hornado, mote, tripa mishki, papas con cuero, librillo. Also the most cities have drinkable water so don't worry. But if you're grabbing a bit out, make sure you don't eat at "mercados"( kinna of outside grocery shopping?) Because the don't prepare food in a aseptic way. I'm from there and I've never got a food disease

Ecuadorian here. You mentioned a lot of good dishes and snacks. Definitely my go to option. You missed a couple seasonal foods like “guaguas de pan”, which are a form of pastry decorated to look like a kid and it’s filled with chocolate, fruit marmalade, or dulce de leche. Also there’s “colada morada”, which is a drink made with red berries and such. It’s really good and served with guaguas de pan it’s even better. But my personal favorite dish would be Fanesca hands down. It’s a seasonal soup that contains many different grains in it. It’s coupled with eggs, little bread balls, chili, or fish if you want (I personally don’t). That one is my favorite because it’s a really heavy soup because of it’s consistency and the amount of stuff in it. Definitely my #1 recommendation.
