Ingredients
Make the Butterfly Pea Flower Ice Cubes:
1 tsp Suncore Foods® Butterfly Pea Flowers Superbloom
3 cups water
1/3 cup freshly squeezed lemon juice

Lemonade:
1/2 cup freshly squeezed lemon juice
3 cups cold sparkling water
1/8 cup simple syrup *adjust to taste
Butterfly pea flower ice cubes

Directions
1. Make the Butterfly Pea Flower Ice Cubes — Place the butterfly pea flowers in a measuring cup, add boiling water. Let sit for 10 mins. Use a spoon to press the flowers against the bottom of the cup so they release more color. Discard the flowers once the color is vivid enough. Let it cool. Divide butterfly pea flower tea into 2, add lemon juice and pour into ice cube tray and freeze overnight.

2. Assembly — Add the ice cubes to a large pitcher. Add sparkling water, lemon juice, simple syrup, and give a good stir. When ready to serve, Serve with sprigs of fresh mint. Enjoy!
