Born and raised in St. Louis area, my parents bbq'd pork steaks often. With the price point I see why. I would never had known it was regional until I spent a few years in CA as it's not sliced and packaged there. I'm back in STL and I will re-live my childhood with my "park stakes".

Okay so I fast forwarded the video trying to get to the part of how to cook or do I put spices or do I wash it first before I cook it and we watched it seven times even in slow motion and still never learned how to cook the damn thing and my oven's been on for 45 minutes

I hope shoulder steaks never take off keep them cheap I buy whole pork shoulders and have the meat department slice em 1-2 inches thick depending on if I grill them or smoke them. Just bought 2 whole shoulders and sliced for 17 dollars got about 12 steaks. And taste just about as good as a ribeye.

I grew up in St. Louis (were talking 1960-1980) we had pork steaks at every bar-B-que....well it was because we couldn't afford beef steaks. It was cheaper than chicken (like 20 cents a pound)....and yes they were only available 1/4" thick. The authentic way to cook pork steaks is a vinegar based marinade like Wickers ( Memphis). When I moved from St. Louis to NE in visiting mom I would buy 20lbs....pick it up frozen at the grocery store....put it in a plastic clamshell suitcase....board a non-stop flight....lot strange looks in baggage claim when your suit case is encapsulated with frost!

I get the bone in pork shoulder from Walmart for $2/lb and cut 3 pork steaks out of them and the rest I freeze to later slow cook for pulled pork. If you like beef ribeye, Chuck eye, flat iron, you'll like pork steak.

Pork steaks are awesome almost no matter how they're cooked, but this is what i do: Season them with coarse kosher salt an hour before cooking, then season with steak seasoning of your choice at cook time. Cook in a cast iron skillet with 1/4" of oil (i like to use bacon grease) on medium high. cook each side 3 minutes at a time, and keep cooking until it looks a good golden brown on both sides, and the fat seems nicely rendered, which will usually be about 6-8 mins per side total.

Most grocery stores cut them too thin. Wished they actually cut it about an inch or an inch and a half. Smh.
