I've made this for my family 3 times since you posted it! Love it! Doubled the recipe each time, but kept the rice and broth for one recipe. Just perfect for us. The small amount of leftovers get heated up with scrambled egg fir burritos in the morning.

I just made your sweet potato chipotle skillet and as always it was delicious.
As much as I love cooking, i have absolutely no time lately, and your one pot meals have been a total lifesaver.
Definitely gonna make this one next week.

One question: if I were to use pasta instead of rice, should I change the amount of liquid? Elbows or maybe orzo.
