❤ The air bubbles came from Temperature was too high.
Only 150c + cover with foil will make silky texture.
Time .. depend on size and how many of them in your steamer or bake in water-bath in the oven.
Check cooked... when the edge firmed. Middle cooked but still jiggly. It will continue cook further after turn off the heat and harder after chill.
Eat after chill otherwise will smell eggy.
I make 10 small servers in hotel kitchen each time.
150°c
55-60 mins
Let them cook
Chill for 2 hours.

For home style steamer without temperature on them. Try to open the lid time to time to maintain low temp or keep the lid open ajar...
The key is cook in low temperature... will get silky texture and prevent bubbles.

🖤If you like bubbles texture, steam them in higher temp it will cooked in very short time. Be careful it can overcook like scrambled eggs.

Owwieee man!!! I gotta make this. Hey I ate something similar to this once, but it had a layer of like strawberrys and the bottom was like a spongy crust with whip cream on top. You know the name of it by chance???

Add one package of cream cheese, sub the milk for evaporated milk, 1 less egg, a dash of salt, Vanilla extract and bake at lower temp.

I promise it will be much better
