I dont have that option on notepad, just the normal pencil option without the “a”, what am i missing?

im new to ipad. is it me or is highlighting text more complicated than necessary? Im literally practicing how to highlight with my finger ( on android its a simple half second longpress and drag) HELP!

Is there a way to edit the text with the pen tool after its been converted? Or edit regulare text with the pen? I've been able to do a few things, but adding spaces or backspacing always requires the keyboard.

Okay, there's something I'm missing. I selected the pencil and as I'm writing it just stays as scribbled type and not converting. What's missing?
