Goan Ros Omelette Recipe:
For the Masala Paste:
Oil - 2 tbsp
Onion (sliced) - ½ Cup
Green Chilli (slit) - 2 nos
Garlic - 6 Cloves
Ginger (roughly chopped) - ½ inch
Cumin - 1 tsp
Cinnamon - 2 inches
Cloves - 5 nos
Dried Kashmiri Red Chillies - 4 nos
Coriander Seeds - 1 ½ tsp
Black Peppercorn - ½ tsp
Grated Coconut - ½ Cup
Turmeric Powder - ½ tsp
Chicken Marination:
Chicken (curry cut) - 250 grams
Ginger Garlic Paste - 2 tsp
Lemon Juice - 1 tbsp
Salt - ½ tsp
Other Ingredients:
Oil - 2 tbsp
Onion (finely chopped) - ¾ Cup + For Garnish
Tomato (finely chopped) - ½ Cup
Water - 1 Cup
Salt
Coriander Leaves (finely chopped) - 2 tbsp + For Garnish
Pav (For Serving- 8 nos
Omelette:
Onion (finely chopped) - ½ Cup
Green Chilli (finely chopped) - 1 tbsp
Coriander Leaves (finely chopped) - 1 tbsp
Eggs - 4 nos
Salt - ½ tsp
Oil - 2 tbsp
Cooking Instructions:
Chicken Marination:
1.Marinate the chicken with all the ingredients for marination. Rest for 20 minutes.
Masala Paste:
1.Heat oil in a pan and add ginger, garlic, green chilli, onion and all the whole spices. Saute until it turns aromatic and the onion is translucent.
2.Add the grated coconut and turmeric. Saute until golden brown.
3.Allow it to cool down, then grind into a smooth paste adding water as needed.
Preparing the Gravy:
1.Heat oil in a pan and add the chopped onions. Saute until it turns translucent.
2. Add the tomato and saute for 1 minute, then add the marinated chicken and saute for 2-3 minutes on high heat.
3. Add the prepared masala paste and saute for 2 minutes.
4.Add water and bring it to a boil. Cover and cook for 15 minutes.
5. Sprinkle coriander leaves, mix and set aside.
Omelette:
1.Add onion, green chilli, coriander and salt to a bowl. Mix it well.
2.Add the eggs and beat until evenly combined.
3.Heat oil in a pan and make omelettes in two batches.
Plating:
1.Cut the omelette or roll it and place it on a plate. Spoon some of the chicken gravy over the omelette, then top with chopped onions and coriander leaves.
