How to Make Moonshine Mash From Cracked Corn

We're making moonshine mash with Jesse, the master distiller behind @StillIt . A lot of people think they're making "real" mash with cracked corn, which is feed corn that has been lightly milled. But if it isn't done right, then it isn't real corn whiskey moonshine mash.

I do the pour over method. I buy cracked corn. 25 lbs 25 lbs brown sugar, amylase, daddy yeast. Heat water to 170, pour into the can and cook for an hour. Then amylase at 130, sugars and stir. Then at 90 add yeast. Takes 7 days or so. Then distill 8 gal in a 10 gallon still. I get 120-150 proof and about 2.5-3 gallons of shine.

Great video and recipe. If it was not for Still It and Clawhammer, I would probably not still and brew as a major hobby 😎🍹🍻

Sounds like you should’ve hit up your local malt house for that really nice malted corn

Cut corn is easier to deal with. And it's usually best to do a protein rest, @125f, when dealing with the high protein feed corn

You really need to do this with some of the heritage corn varieties. Bloody Butcher corn is a great choice.

Jimmy made a living out of cracking corn. And he did not care at all about what became of it!

How about soaking the corn in hot water then mill it so it's not so hard on the mill then add your enzymes and yeast

The best corn grinder I found is a buffed coffee grinder. Model 750 crusher for corn.

When making all corn do we need any nutrient with the yeast? Not using any sugar. 2 tablespoons of distillers yeast . 5 gal. Batch.

I use my BLENDER! 3 scoops on high 30 seconds turns it into cornmeal. Shake it well.
