Lazy Sweet Potato Gnocchi, w/ Balsamic Lamb Ragu

This one is extremely popular work, and one I have to make for 240 people at once. So it needs to be quick and easily to scale into massed.

So there won't be any forking of individual pieces into perfect shapes, but there will be the tastiest gnocchi ever.

The recipe is difficult, because I'm a throw in everything chef, but I'll give it a go.

The ragu:
1kg forequarter lamb chops
3kg fresh tomatoes (pureed will work)
3 onions
3 cloves garlic
50ml Balsamic Vinegar (to taste)
1 Bunch Basil
Salt, Pepper, Sugar to taste

Gnocchi.
3 potatoes medium
1 medium sweet potato
5 cups flour (to consistency)
100g Parmesan Cheese
1 egg
Salt & Pepper.
