How to Make Jamaican Wedding Cake (Lighter Version)

In a previous video I showed you in my other video how I made the faux cakes for our wedding. This video is features the edible portion of our cake. Traditional Jamaican wedding cake is a type of fruit cake. It is also traditional to make this type of cake around Christmas time, it’s a yummy, rummy fruit cake and if you have any Jamaican friends, you may have had this around the holidays.
The Christmas cake is often baked in a tin and gets soaked in additional alcohol, but this is going to be a freestanding cake and we have quite a few non-drinkers and a few children, so I am taking it easy on this one.

Also this recipe does not have any browning so it came out very light in color, more resembling a spice cake.

What I used for this video:

INGREDIENTS:
Soaked Fruits:
*This will make twice as much as you need for the batter, but will keep forever as long as you keep it submerged in alcohol.

• 15 oz lb golden raisins
• 20 oz mix of berries & golden raisins
• 22.58 oz raisins
• 1 lb 2 oz prunes
• Peel of 5 lemons, candied
• Peel of 4 oranges, candied
• 5 oz sweetened dried cherries
• 2 tsp cinnamon
• 1 tsp ground nutmeg
• 1 tsp vanilla extract
• 1 tsp almond extract
• Cover with 1.75+ Liters dark rum
• Top off with port wine

Batter:
• 1 lb unsalted butter, room temp (but not too warm)
• ¾ lb / 340 grams dark brown sugar
• 12 fl oz / 360 ml molasses
• 1½ tsp cinnamon
• 1½ tsp ground nutmeg
• ¼ tsp cardamom
• ½ tsp ground ginger
• 2 pinches of kosher salt
• 1½ tsp vanilla bean paste (you can use extract)
• 1 tsp almond extract
• ¼ tsp ground cloves
• 11 Eggs, room temperature
• 8 cups of the soaked fruit, pureed
• 14 oz / 400 grams flour
• 1 tsp baking powder

Buttercream Frosting

METHOD:

Soaked Fruits:
Prepare fruits and allow to soak in rum for 2 months. Keep in air tight container in a cool place and check liquid level and stir occasionally. Add additional rum or port to cover top of fruit if necessary.

Batter:
1. Beat butter and sugar on high-speed until it becomes fluffy and doubles in volume
2. On medium speed slowly add molasses, all flavors and spices.
3. Now add one egg at a time.
4. Puree 8 c soaked fruit. Mix well into batter.
5. Sift baking powder with flour into batter.
6. Line baking pans and divide batter among them equally
7. Preheat over to 300 degree Fahrenheit and bake for about 1 hour or more depending on your pans. Bake until just set
8. Allow cake to cool before removing them from tin
9. Once cool, remove any ridges
10. Decorate with frosting of your choice
(Black Cake is usually served with “hard sauce” which is a butter, rum, and sugar mixture so I would recommend a rum-infused buttercream, which is what I used in the video)

FYI: Since I only made this the top tier of our wedding cake (which was 6” and 4 layers), we had cake left over for tasting and sharing. You can also freeze this cake if you would like. It will keep for months.
