Before visiting the Elmarani family farm near Fes, Morocco in January 2016, I had no idea how one would make couscous from scratch. The traditional dough is simply semolina flour and water (wheat flour can also be added to the mixture if desired), but transforming the dough into couscous beads is an art, as Fatima expertly demonstrates.

Can you explain what’s going on in each step here? After sifting, why does she toss some into one plate from the big reed basket and some into another?

Btw this is a great video so thanks. Just need some help understanding what’s happening in each step of the process.

I'm at a loss of words. On one end this person was able to visit place on earth here people work hard and are skilled enough to produce a pasta that this fine.
But he ( the Person who captured all of this was incomplete enough not to explain all the steps and process that was taking place)
