I am Bengali ...we don't use rawa on the begun...just haldi, salt and just a pinch of sugar and fry it on mustard oil...

Tips for begun bhaja: motey pieces ache lagte hain
Try and sprinkle rice flour, kurkure baatein hai. Besan bhi sprinkle kar sakte ho.
Jewal namak aur haldi se bhi bahut ache bantein hai. Pieces zaroor motey hi rakhna.

I am a bengali but we dot put rawa or suji on the begun.. just use sarso tel and haldi namak.. that is it.. and then fry..i love begun bhaja..barsat je mausam me plain khichri and begun bhaja is a bliss..

Sirf haldi namakand thoda sa sugar lgakar..dhak kar rakh dena hai, fir sarso ke tel me deep fry nhi..
Shalow fry krna hai ..by covering it, nd sprikling of water..beech beech me..
Thats begun bhaja
Aap jo bna rhe hai..wo bhajiye jaisa..hai baigan ka..
