Pistachio Cranberry Biscotti
1 C Roasted Pistachio's *
2 C Flour
1 tsp Baking Powder
1/4 tsp Baking Soda
1/4 tsp Salt
1 Stick of Butter - softened
3/4 C Sugar
2 Eggs
1 tsp Vanilla
1 C Dried Cranberries
* If you have raw pistachio's, set oven to 350 - spread nuts on baking sheet and bake
until golden brown, approx 6 minutes
Turn oven down to 325
In a medium bowl whisk flour, baking powder, baking soda & salt. - set aside
In a large bowl cream the butter & sugar until light & fluffy, add eggs one at a time, add vanilla and
mix until well combined.
Add flour mixture and mix on low speed. Fold in nuts and cranberries.
Line a baking sheet with parment paper or butter and flour surface.
Divide dough into two. Shape into logs approx 14" x 1" x 2"
Bake on lower part of oven, 325 for 20 minutes. Let cool completely.
With a serated knife slice the biscotti approx 1 1/2" thick and place back on the baking sheet.
Place back in oven for 7 minutes, turn over cookies and bake for another 7 minutes or until golden
brown.
