✳️ Macros (makes 12 slices):
144 Cals, 12g Carbs, 4g Fat, 15g Protein
✳️ Ingredients for Wet Ingredients:
2 Whole Eggs
340g or 3/2 Cups Plain Nonfat Greek Yogurt
60g or 1/4 Cups Light Butter, Melted
10g or 2tsp Avocado Oil
15mL or 1tbsp Lemon Juice
7.5mL or 1.5tsp Lemon Extract
✳️ Ingredients for Dry Ingredients:
180g or 3/2 Cups All Purpose Flour
144g or 3/4 Cups Granular Sugar Substitute (I used Swerve)
3 Scoops Vanilla Protein Powder (I used PEScience whey/casein blend)
4g or 1tsp Baking Powder
1g or 1/3tsp Xanthan Gum
1g or 1/2tsp Salt
✳️ Ingredients for Glaze:
192g or 1 Cup Confectioners Sugar Substitute (I used Swerve)
1 Scoop Vanilla Protein Powder
45mL or 3tbsp Almond Milk
15mL or 1tbsp Lemon Juice
✳️ Directions:
1. Preheat oven to 350 degrees.
2. Grab mixing bowl. Add ingredients for wet ingredients. Mix thoroughly.
3. Grab another mixing bowl. Add ingredients for dry ingredients.
4. Add dry ingredients to wet ingredients. Mix.
5. Add mixture to loaf tin with parchment paper or cooking spray. Bake at 350 degrees for 45 minutes.
6. Grab another mixing bowl. Add ingredients for glaze. Mix. Store in fridge while baking so it thickens.
7. Let it rest for 15 minutes. Top with mixed glaze. Slice into 12 slices. Store in fridge. Then enjoy!
