The Complete Saw timeline:
(Spoiler alert!)

Saw IV- John was originally an architect and an engineer, while his wife Jill works in a pharmacy. A few years later, they had news that Jill was having a baby. They were both happy by the news, but they didn't know that the happiness wouldn't last long.
Saw VI- At the same time, a woman named Amanda was desperate for drugs and sent a man named Cecil to steal some from the pharmacy.
Saw IV-Cecil bust through the door to steal some drugs like Amanda told him. But he didn't expected Jill was near the door and the impact killed their unborn baby. After the incident, both Jill and John decided to split up. John was later diagnosed with cancer by Dr. Gordon, which adds more devastation to him.
Saw III- Dr. Lynn was supposedly the one assigned for John's brain surgery.
Jigsaw- However his surgery wasn't continued after his x-ray was mistakenly labeled by Logan.
Saw VI- John hasn't given up yet, as he proceeds with a different solution. He visited a health isurance company which belongs to William Easton. He asks for health coverage, yet Easton denied it.
Saw IV- John had finally captured the man responsible of his wife's miscarriage and made him his very first victim. This is the time when John is starting to become Jigsaw.
Jigsaw- He started his killing spree by abducting five individuals and tested them. One of them includes Dr. Logan who wrongly labeled John's tumor. He was supposed to die in the first game, however John manage to save him in time. Cause he thinks he's gone way too far by dragging Logan into this just for a simple mistake. He decided to give him another chance, which is becoming John's very first assistant. Together they created the Jigsaw legacy.
Saw V- After finding out his sister's death, Detective Hoffman tracked down the killer and used the same tactic of Jigsaw against him. A day later, he got captured by the jigsaw killer himself. He confronted Hoffman for not only copying him but also not giving his victim a chance to live. In the end, he decided to free Hoffman but threatened him to work alongside him or he will expose his secrets to the public. With that Hoffman agreed and they worked together in capturing victims, even leaving Dr. Gordon's pen in scene to blame him.
Saw I-Detective Tapp and Sing then suspected Gordon becauss of his pen. While one of the hospital staff named Zepp befriends John.
Saw 3D-It was also revealed that Hoffman was already known for his violence. Due to the fact that he once saved a fellow officer, Matt Gibson. From a man who attacked him by shooting the man even though he already disarmed himself. From that day Hoffman was promoted while Gibson was transferred to public affairs.
Saw II- Amanda was charged by Detective Matthews for doing drugs.
Saw I-Unluckily for her, Jigsaw captured her and used the reverse bear trap against her. She later survived the trap but got recruited at Jigsaw's legacy.
Saw I- Two unlucky guys became a victim of Jigsaw. It was Adam; a photographer who was hired to take pictures of rich guys having an affair with their secretary and Dr. Gordon; who diagnosed John with cancer. Both of the two worked together but Dr. Gordon sawed off his foot after finding out his family was taken hostage. They then outsmarted Zepp;the staff who befriended John since they both thought he was the jigsaw killer. But when Gordon goes out to seek help Adam was locked in by John who revealed his identity to him.
Saw III- Unwilling to see Adam suffer, Amanda decided to kill him as an act of mercy.
Saw 3D- Gordon on the other hand was treates by John and became another apprentice.
Saw X- John who was still willing to get rid of his cancer seeks help on Dr. Cecilia and her companions. The surgery was a success and John was very thankful to her. After that, he starts to regain his humanity he was about to abandon his killer instincts and live a better life. Until one day, he came back where Cecilia works to give her half of his cash but found out a shocking discovery. The building was empty, he saw a tape that recorded a brain surgery which he thought it was his reflection in a mirror when he takes a glimpse of it during his surgery, he then took off his bandage and he has no scars. Everything makes sense, all of this is fake it was all a scam. John was starting to become Jigsaw again and asked some assistance at Amanda and Hoffman to capture the responsible party. After torturing the people behind it, John found out that Cecilia is a bit difficult enemy for him. Cause she manages to put him in one of his traps, thanks to her friend who was pretending to be a victim of the scam. Those two were later forced in a trap to kill each other. In the end, Cecilia won the fight but her fate was unknown.
Saw II- Jigsaw's identity was finally revealed, when Eric Matthews and his men surrounded him. However, they were forced to watch a game. In which one of the victims was Amanda and Matthews' son. Matthews eventually beats up John after finding out about his son and threatens to tell him the location. When Matthews came to try and rescue his son he was ambushed by Amanda and locked him up.
Saw III- After being brutally beaten up John was still recovering and Amanda was the one to do his job.
Saw IV- At the same time, a group of detectives starts tracking John's lair. Which is Detective Strahm, Rigg and Hoffman.
Saw III- While this was happening a man named Jeff was also captured including his wife Lynn, who was forced to do a surgery on John. Since she was the one supposedly assigned for his brain surgery.
Saw VI-Amanda found a letter which was written by Hoffman telling her to kill Dr. Lynn or he will expose to John her relation to Cecil.
Saw III- The surgery was a success and John was about to grant Lynn freedom. But was stopped by Amanda, John tried to reason with her. But she still ends up shooting Lynn, which results of her being shot by Lynn's husband: Jeff. After that, Jeff killed John thus ending his tyranny. But that didn't save his wife as the trap detonates which killed her and John revealed that her daughter was also somewhere within the room.
Saw IV- Detective Rigg stumbled upon his colleague Hoffman and Matthews who is still alive being captured as well. But accidentally deactivates a trap that kills Matthews and Hoffman revealed his identity to Rigg and left him to die.
Saw V- Strahm ended up witnessing Jeff killing John and kills him in retaliation when the man starts acting aggressive. He was captured by Hoffman and was trapped but managed to escape. Hoffman then saved Jeff's daughter to make it look like he's not suspicious. When Strahm almost defeated Hoffman after learning his identity he still got killed by a trap.
Saw VI- Some of his fellow officers started suspecting Hoffman. But when they did, they were killed in resistance. Hoffman then tested Easton, who denied health coverage on John and other people. He still got killed in the end by the vengeful son of a father he also denied health coverage. Jill tries to kill Hoffman to end the legacy, but he manages to survive.
Saw 3D- After finding out about Hoffman, the cops have a large manhunt. Jill seeks help on Matt Gibson; the officer Hoffman saved in the past. Although he tries his best in capturing Hoffman, he was killed. Hoffman then captured Jill and ended up killing her but Gordon imprisoned Hoffman as a justice.
Jigsaw- Logan gets his revenge on Detective Halloran for letting a murderer go who killed his wife. He also made a game similar to the first game Jigsaw created in his past.
Spiral- A copycat who started targeting corrupt cops was on a flee. Detective Zeke was trying to find who the killer was. Only for him to be his colleague Detective William who faked his own death to get his revenge on the corrupted cops. It all finally ended when Zeke was framed along with his dad and William just quietly sneaks away.

The real timeline is this:
1. Jigsaw 2017 (John creates his first game, Logan is his first disciple)
2. Saw (John is already known as Jigsaw, Amanda, Gordon and Hoffman are his disciples)
3. Saw X (John's cancer has not yet fully affected him)
4. Saw II (The police discover that John is Jigsaw, Amanda locks Eric in the bathroom)
5. Saw III (John, Kerry and Amanda die)
6. Saw IV (Hoffman is "kidnapped", and becomes the new Jigsaw, Rigg and Eric die)
7. Saw V (Hoffman escapes without arousing suspicion and blames Strahm for helping Jigsaw, Strahm dies)
8. Saw VI (Hoffman is discovered, and Jill tries to kill him, Erickson and Perez die)
9. Saw VII (Hoffman flees from the police, makes his last game, and Gordon locks him in the bathroom, Jill dies)
10. Spiral (Many years later, William Schenk creates games for corrupt police officers, being an imitator unrelated to John)

I may be wrong with Saw X but since they said it's a prequel between the events of Saw and Saw II, I believe that's the place it should have on the timeline.

Edit: decided to actually do a change with Jigsaw cuz it's true that it's a prequel to Saw 1 but also a sequel to Saw VII/3D.
If u want to know if you should watch it in what order, I would say on release order cuz u don't rlly miss much in my opinion before you get to the other movies.

The saw timeline is a tricky one, but this certainly is not it. Your must keep in mind that saw 4 and saw 5 are flashbacks. 4 takes place at around the same time as saw 3 (the endings overlap) and saw 5 takes place right after 4.
