Each week, the cast of America's Test Kitchen brings the recipes, testings, and tastings from Cook's Illustrated magazine to life on our public television series. With more than 2 million viewers per episode, we are the most-watched cooking show on public television.

More than 1.3 million home cooks rely on Cook's Illustrated and Cook's Country magazines to provide trusted recipes that work, honest ratings of equipment and supermarket ingredients, and kitchen tips.

Found this yesterday and it worked beautifully. We defrosted some haddock fillets and there was quite a strong fish smell, we placed the two fillets into a bowl and covered them with milk, left for 20mins and then patted them dry on kitchen roll. The strong fish smell was neutralised and the milk had not influenced the taste of the fillets. 100% success 👍

If this works, I'll come back to tell. Had a lovely salmon fillet 2 nights ago that was so fishy, I could barely finish it. Have been pondering what I will do with the ones still in the freezer, so will give it a try. Thanks for the tip.

You just increased the quality of my life many-fold. I seek to eat sardines as a main food, especially in this pandemic era & Russia-China vs USA dispute era, where my usual frozen salmon has not been available at the store in a year or so. I actually dread grabbing the sardines to prepare, due to the odor I know I am about to endure with cooking/ eating. Wow. If this works, I will be eternally grateful. I can't wait to give it a try.

Also note, make sure you're using whole milk; not fat free or 2% obviously. If you don't want to waste it, just pour it back into the carton and await the next victim to have their cereal.

Does this work if I'm making sashimi/sushi? I've got a block of salmon that smells fishy and I don't know if I can eat it >.<

The biggest issue I have is that I grill some salmon at home, and the smell REMAINS in the house for a day or so, even after I opened all the windows and stuff. Will this method prevent (or significantly reduce) the smells from sticking in the house?

This is great. It works well. It makes me mad though that the frozen flounder I just thawed is so fishy smelling. Shouldn’t frozen sea foods be frozen in the factory real quick after caught?
