Can confirm Hadley's comment re. weighing eggs at 5:55. The way to measure eggs in a pastry kitchen is to whisk a bunch of eggs together to get a good mix of whites and yolks, and then measure eggs to the mL or to the gram. Unused eggs can easily be added to other recipes in this way. We weighed *all* ingredients to make the recipes as predictable as possible.
