Cold soak, also known as pre-ferment maceration, is a winemaking technique where crushed red grapes are kept at a low temperature before fermentation. Here’s why it’s a game-changer:
✨ Extracting Color and Flavor
Cold soak enhances the extraction of anthocyanin, aroma, and flavor compounds from the grape skins. This results in deeper, richer colors and brighter flavors, such as cherry or raspberry.
🍷 Extracting Tannins
This technique extracts softer tannins, creating a silkier mouthfeel and preventing the excessive extraction of tannins that can occur when alcohol is present.
🦠 Allowing Yeast to Grow
Cold soak provides nutrients for indigenous yeast and suppresses unwanted yeast and bacteria. It’s crucial to lower the temperature slowly to keep the yeast viable.
